- 1 cup soft butter
- 2 cups flour
- ½ cup sugar
- zest of 2 lemons, reserve half for garnish
- zest of 2 limes, reserve half for garnish
- Soda Pop Lemon Curd (see recipe below)
- Soda Pop Lime Curd (see recipe below)
- confectioners’ sugar, for garnish
Sod Pop Lemon Lime Curd Ingredients:
- 2 packets of Lemon I.E. Green Tea
- 3 large eggs
- ½ cup sugar
- zest of 1 large lemon
- ¼ cup fresh lemon juice
- zest of 1 large lime
- ¼ cup fresh lime juice
- 4 Tbsp. cold butter, diced
- ⅛ cup lemon-lime soda

Preheat the oven to 350 degrees.
Pulse all of the ingredients in a food processor 4 or 5 times, for 5 seconds each time, until the dough holds together. Press the dough evenly into the bottom of an ungreased 9” x 13” pan.
Gently press the tines of a fork into the dough in three rows. Bake for 20 minutes, until crust is raised slightly and golden brown.
Make the Soda Pop Lemon Lime Curd while the crust is cooling.
Once the crust and curd has cooled, spoon one layer of the Soda Pop Lemon Lime Curd on the crust, and smooth the top. Shake a light dusting of powdered sugar and a light sprinkle of lemon and lime zest over the top.
Refrigerate for 1 hour then cut the bars into 2-inch squares.
Soda Pop Lemon Curd and Soda Pop Lime Curd
In a medium bowl, add the ingredients for the lemon/lime curd except the butter. Whisk until smooth.
Pour the liquid into a medium saucepan over medium heat. Stir constantly with a wooden spoon until the curd thickens, about 7 minutes. Reduce the heat to low, and add the butter. Stir until smooth.
Pour into a medium bowl. Cover and refrigerate for at least 1 hour.
