IE Green Tea Limoncello
The Easy Peasy Green Teasy Limoncello recipe:
Ingredients: |

1 liter Grappa (40% ABV)1 |
Zest of 15 Lemons (≈2 ¾ kg) |
250 ml Water |
500 ml Sugar |
1 May substitute Vodka or other clear liquor
- Zest the lemons in large sections, taking as little of the pith as possible
- Juice the lemons and save for other uses
- Place the Grappa and lemon zest in a large jar
- Gently turn jar to fully coat the lemon zest
- Place the jar in a cool, dark place to allow for infusion
- Gently turn jar every day
- After 6 weeks, test lemon zest by bending a large section
- If the zest piece breaks easily, the infusion is complete and ready for the addition of syrup
- If the zest piece bends but does not break, replace the zest piece, and wait a week
- Prepare the syrup
- Combine the water and sugar over medium heat until fully dissolved
- Cool the syrup to room temperature before adding to the lemon infused Grappa
- Prepare the lemon infused Grappa
- Remove the spent lemon zest from the Grappa
- Strain the lemon infused Grappa through a fine mesh sieve
- Strain the lemon infused Grappa again using moist cheese cloth with a fine mesh sieve
- Strain the mixture once more using moist #4 coffee filters and a fine mesh sieve
- Combine the lemon infused Grappa with the room temperature syrup to make Limoncello
- Return the Limoncello to the jar and rest in a cool, dark place for 6 weeks
- Strain the rested Limoncello through moist #4 coffee filters and a fine mesh sieve
- Return the Limoncello to the bottle and seal tightly
- The final amount of Limoncello will be 1.35 liters at 30% ABV
- Place in freezer and enjoy in moderation
