Peach Bourbon Glazed Donuts

Peach Bourbon Glazed Donuts 

⅓ cup vegetable oil

3 eggs

1¼ cups of brown sugar

1 cup Homemade Peach Chutney (recipe below)

¼ cup peach nectar

2 packets of Peach I.E. Green Tea 

1½ tsp. vanilla extract

1 tsp. ground cinnamon

Pinch of salt

1½ tsp. baking powder

2 cups unbleached flour

2 Tbsp. sugar/1 Tbsp. cinnamon mixed together 

Peach Bourbon Glaze

1½ cups confectioners’ sugar

1 Packet of Peach I.E. Green Tea

3 Tbsp. maple syrup

1 Tbsp. bourbon

2 Tbsp. water

Homemade Peach Chutney 

1 Tbsp. butter

4 fresh Peaches, peeled, pitted, and chopped 

1 Packet of Peach I.E. Green Tea

1 Tbsp. brown sugar

¾ cup water

1 tsp. freshly squeezed lemon juice

1 tsp. ground cinnamon

¼ tsp. nutmeg

Preheat the oven to 350 degrees.

Lightly grease two doughnut pans. Stir together the oil, eggs, sugar, Homemade Peach Chutney, vanilla, cinnamon, salt, and baking powder until smooth. Stir in flour until incorporated.

Fill each segment of the doughnut pans with ¼ cup of batter, almost to the rim of each segment. Bake for 16–18 minutes. Remove the doughnuts from the oven. Let them cool for a few minutes,  and then transfer them to a rack. While the doughnuts are still warm, lay each one, front and back, on a plate full of cinnamon-sugar mix.

Dip the entire doughnut, front and back, in the Peach Bourbon Glaze and serve warm. These are messy and so delicious! Lick fingers to get every last drop of glaze. Enjoy! 

 Peach Bourbon Glaze

Blend all of the ingredients together. Set aside.

Homemade Peach Chutney

In a medium saucepan, melt the butter. Add the apples. Brown the peaches in the butter. Add brown sugar to coat and caramelize the peaches. Add water. Cover and bring to a boil. Reduce heat to low and simmer for approximately 10 minutes.

Add lemon juice, and the Peach I.E. Green Tea. Stir until incorporated. Add cinnamon and nutmeg. Continue to cook for another 10 minutes or so. Once the mixture has softened, mash the mixture with a fork. Leave the peaches chunky. Set aside to cool.
